Quinoa salad with tomatoes, cucumbers and mint
This is a very light, refreshing salad ready in under 20 minutes! While the quinoa is boiling, chop the veggies then simply toss everything together and... voilà, dinner is served!
Ingredients (serves 4)
- 1 cup quinoa, boiled according to the instructions on the packaging
- 1 English cucumber, diced
- 2 tomatoes, diced
- 1/2 red onion, minced
- 1 cup fresh mint leaves, finely chopped
- 1 teaspoon dry mint
- 1 lemon, juiced
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste
Place the quinoa into the serving bowl, fluff with fork and allow to cool. Add the rest of the ingredients and toss gently. Taste and adjust seasonings. Enjoy!
