Pasta with roasted Brussels sprouts and orange pepper
Very easy to make, this pasta dish is super delicious and so comforting when the weather is not! Simply toss the veggies with good quality olive oil and garlic powder and let the oven do the work for you!
Ingredients (serves 4-6)
- 500 g pasta of your choice, boiled 'al dente', drained and reserved
- 400 g Brussels sprouts, washed and trimmed then cut in half
- 1 orange pepper (or yellow, red etc.) cut into 4 cm pieces
- 1 onion, sliced not too thinly
- 1 garlic clove, mashed (optional but highly recommended)
- 1 Tablespoon garlic powder
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste
- good quality balsamic glaze, to taste
In an oven proof dish, toss the Brussels sprouts, pepper and onion slices with the olive oil and garlic powder, then roast at 400F until fork tender and some edges are slightly charred. Remove from oven, add the garlic (if using), pasta, season with salt and pepper and toss to combine. Drizzle some balsamic glaze and enjoy!
