Potato salad with green peas and smoked tofu


A delicious potato salad that can be served either warm or cold. It is great on its own or as a side dish, accompanying heavier, grilled dishes.

Ingredients (serves 6)
- 6 large potatoes, boiled then diced
- 2 cups green peas, boiled then drained
- 1 roasted red pepper, diced
- 200g smoked tofu, diced
- a handful Kalamata olives
- a handful parsley, chopped/ 1 Tablespoon dry parsley

For the dressing
- 1 garlic clove, mashed
- 1 Tablespoon Dijon mustard
- 3 Tablespoons red wine vinegar
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste

In a large bowl, combine the potatoes with the peas, roasted red pepper, tofu, olives and parsley. To prepare the dressing, mix the mashed garlic with salt and pepper, add the Dijon mustard and stir to combine. Gradually add in the vinegar and the olive oil, stirring constantly. Pour the dressing over the salad and toss gently to combine. Adjust the seasonings to your preference and enjoy!
