Tofu and baby spinach dip
This dip is so light, flavorful and super easy to make! Serve it with tortilla chips, crackers, crudités or as a sauce over 'special fries'.
Ingredients
- 1 package 300g soft silken tofu, drained
- 2 cups baby spinach, washed and thoroughly dried
- 1-2 garlic cloves
- 1 Tablespoon nutritional yeast (optional)
- 1/2 lemon, juiced
- 2 Tablespoons extra virgin olive oil
- Himalayan/sea salt and freshly ground pepper, to taste
Garnishes:
- 1 Tablespoon parsley
- 1/2 Tablespoon - 1 Tablespoon crushed red pepper flakes
Place all ingredients except for the garnishes in the blender and pulse until desired consistency is reached. Taste and adjust the seasonings. Place the dip in a bowl and garnish with the parsley and red pepper flakes. Enjoy!
