Orange pepper falafels
These easy to make falafels work great in sandwiches, with potatoes and a salad or as an appetizer. If available, use a food processor to chop the onion and pepper and to purée the chickpeas with the spinach.
Ingredients (serves 4-6)
- 4 cups boiled chickpeas, drained
- 1 large orange (or any other color) pepper, diced
- 1 red onion, minced
- a handful spinach, washed and thoroughly dried
- 3 Tablespoons chickpea flour
- 1 Tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- sea salt and freshly ground pepper
Preheat the oven to 400F and prepare two baking sheets by lining them with parchment paper. Working in batches, purée the chickpeas and spinach in a blender. Transfer to a large bowl and add remaining ingredients, mixing well using a wooden spoon. Taste and adjust seasonings. Using an ice cream scoop (or your hands), shape the little balls and place them on the baking sheet. Bake for about 25 minutes or until slightly crispy on the outside. Enjoy!
