Tofu and mushroom neat balls
These delicious and easy to make neat balls can be served as an appetizer, in sandwhiches, Buddha bowls, with potatoes or rice.
Ingredients (serves 6)
- 1 package 500g (organic) extra firm tofu, rinsed and patted dry
- 600g mushrooms, wiped clean and quartered
- 1 red pepper, cut into bite size pieces
- 1 onion, quartered
- 4 garlic cloves
- 1/2 cup panko breadcrumbs
- 1 Tablespoon garlic powder
- 1 Tablespoon onion powder
- 1 teaspoon paprika
- 2 Tablespoons Tamari
- 2 Tablespoons chia seeds
- sea salt and freshly ground pepper, to taste
Line a baking sheet with parchment paper and reserve. In a small bowl, mix the chia seeds with 6 Tablespoons of water and allow to sit while you prepare the remaining ingredients. Working in batches, finely chop the tofu, mushrooms, pepper, onion and garlic using a food processor. Add them to a large bowl and combine with the breadcrumbs, chia, and remaining spices and seasonings. Mix well using a wooden spoon, taste and adjust the seasonings. If the composition is still very wet, add a little bit more breadcrumbs. Using your hands, form the neat balls (approximately 1.5 inches/4cm in diameter) and place them on the baking sheet. Bake at 375F for about 30 minutes or until a crust forms on the outside. Enjoy!
