Roasted asparagus with Brussels sprouts and pepper
This is an easy to make, delicious and colorful side dish.
Ingredients (serves 6)
- 1 small bunch asparagus, washed, tough ends snapped off
- 400g Brussels sprouts, washed, trimmed and larger ones cut in half
- 1 red pepper, washed and cut into bite size pieces
- 1 yellow (or other color) pepper, washed and cut into bite size pieces
- 2-3 Tablespoons extra virgin olive oil
- sea salt and freshly ground black pepper
Place veggies in an oven proof dish (or baking sheet lined with parchment paper) and gently toss with the olive oil. Roast at 400F for about 25 minutes or until a fork easily pierces the Brussels sprouts. Remove from the oven, season with salt and pepper and enjoy!
