Country style roasted potatoes
This is a simple and delicious side dish that goes really well with hummus!
Ingredients (serves 4)
- 4 large potatoes, peeled and diced
- 1 large onion, minced
- 3 Tablespoons extra virgin olive oil
- 1 Tablespoon smoked (or regular) paprika
- 1 Tablespoon onion powder
- 1 Tablespoon garlic powder
- sea salt and freshly ground black pepper
- green onions or parsley, to garnish
Place the potatoes and onions on an ovenproof dish and drizzle with the olive oil. Use your hands to coat each potato piece with the oil. Sprinkle with salt, pepper, paprika, onion and garlic powder. Using your hands again, massage the spices onto the potatoes, until evenly distributed. Roast at 400F for about 25 minutes or until potatoes are fork tender. Garnish with the green onions or parsley (or both!) and enjoy!
