Easy chickpea salad

 



This is a quick and easy salad that goes with so many things: with potatoes, with rice, as part of a buffet or simply with fresh bread. The quantities listed below are guidelines, feel free to adjust them to your preference.

Ingredients (serves 4-6)

- 1 can organic chickpeas, drained and rinsed

- 1 garlic clove, mashed

- 1/4 - 1/2 red onion, minced

- a handful fresh parsley, chopped

- 1/2 lemon, juiced, or more, to taste

- 2-3 Tablespoons extra virgin olive oil

- 1 teaspoon sumac (optional)

- sea salt and freshly ground black pepper, to taste

- 1 tomato, chopped, to garnish


In a medium size bowl, combine the chickpeas with the garlic, onions and parsley. Season with the sumac, salt, pepper, lemon juice and olive oil. Gently stir, taste and adjust seasonings. Garnish with the chopped tomato and extra parsley and enjoy!
