White bean soup




Cold weather calls for hearty, comforting dishes such as this white bean soup. Soak the beans overnight, then boil them with an onion, a couple of bay leaves and a drizzle of olive oil. Keep the boiled beans in their boiling liquid in the fridge until ready to use. 

Ingredients (serves 6-8)
- 2 cups boiled white beans
- 1 large onion, minced
- 3 large carrots, sliced
- 3 potatoes, diced
- 4 garlic cloves, minced
- 200 ml tomato paste
- 2 bay leaves
- 2 teaspoons paprika
- salt and pepper, to taste
- 3 Tablespoons extra virgin olive oil

Heat the olive oil and sauté the onions with the garlic until translucent. Add the carrots and potatoes and cook for 5 minutes longer, stirring often. Add the paprika and tomato paste and cook for a minute, stirring continuously then add the boiled beans, bay leaves and enough water to completely cover the veggies. Season with salt and pepper and simmer until all veggies are tender. Taste and adjust seasonings. Add a drizzle of extra virgin olive oil and serve with bread. Enjoy!
