Pinto beans spread


Pinto beans are so incredibly flavorful, they don't require the addition of many other ingredients to make a delicious dish! 

Ingredients
- 1 cup pinto beans, soaked overnight then drained
- 1 large onion, minced
- 1 red pepper, finely chopped
- 2 garlic cloves, smashed and finely chopped
- 1/2 teaspoon cayenne 
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Cover the beans with plenty of water and boil until tender. Heat the olive oil and sauté the onions with the garlic until translucent, add the peppers, season with salt and pepper and cook until peppers have softened. Add the drained beans and cook, stirring often, until all liquid has evaporated. Place the bean mixture in a blender, add the cayenne, salt and pepper. If the spread is too thick add a tablespoon or so extra virgin olive oil and blitz again. Serve with your favorite bread (or polenta and pickles!) and enjoy!
