Quinoa salad with radishes, tomatoes, peppers and cucumbers



A light and refreshing salad to celebrate summer!

Ingredients (serves 4-6)
- 1 cup quinoa, boiled according to the instructions on the packaging
- 1 English cucumber (or 3 garden cucumbers), cut in half lengthwise then sliced
- 1 tomato, diced
- 1 red pepper, cut into bite size pieces
- 1 orange pepper, cut into bite size pieces
- 1 yellow pepper, cut into bite size pieces
- 5 radishes, sliced
- 1 small red onion (optional), minced
- a handful mixed greens of your choice (baby spinach, arugula, kale etc.)
- 1 lemon, juiced
- 3 Tablespoons extra virgin olive oil
- 1 Tablespoon dry mint
- sea salt and pepper, to taste

Place the quinoa in a large bowl, fluff with fork and allow to cool. Add the remaining ingredients, toss gently to combine, taste and adjust seasonings to your preference and serve immediately. Enjoy!
