Cauliflower and potato patties with sunflower seeds



These simple cauliflower patties are best served warm, fresh out of the oven. Enjoy them with a cabbage salad, bread and tofu-avocado dip.


Ingredients (serves 4-6)
- 1 small cauliflower head, cut into florets
- 6 medium size potatoes, peeled and diced
- 1/2 cup sunflower seeds
- 2 garlic cloves, mashed
- 1/2 cup panko breadcrumbs
- 1/2 teaspoon cayenne
- sea salt and pepper, to taste


Bring two medium size pots of water to a rolling boil, one for the cauliflower and one for the potatoes. Add some salt and the cauliflower florets to one of the pots, and the potatoes to the other. Boil for 5 minutes or until fork tender, then drain completely. Place the sunflower seeds in a food processor and blitz to a coarse consistency then transfer to a large bowl. Add the potatoes to the sunflower seeds and mash using either a fork or a potato masher. Place the cauliflower florets into the food processor and blitz until quite smooth (some chunkier pieces are fine). Add the cauliflower to the potato mixture together with the garlic, breadcrumbs, cayenne, salt and pepper. Mix to combine, taste and adjust the seasonings. Form patties using your hands, place them on an oiled baking sheet and bake at 350F for 25 minutes or until a crust forms on the outside. Serve with pita bread and a salad and enjoy!
