Roasted carrot salad with quinoa, walnuts and vegan feta

This is a hearty salad filled with delicious flavors! If rainbow carrots are not available, the good old regular carrot will certainly do the job. Serve the salad at room temperature for best flavor.

Ingredients (serves 4-6)
- 1/2 cup white quinoa
- 1/2 cup red quinoa (or more white quinoa)
- 9 different color carrots, sliced into 2 inch (5cm) pieces
- 1/2 cup walnuts, toasted and coarsely chopped
- 100g vegan feta cheese, crumbled
- 3 Tablespoons extra virgin olive oil
- sea salt and pepper, to taste

Place the carrots on a baking sheet, toss them with the olive oil and roast at 375F. Combine the red and white quinoa and boil it according to the instructions on the packaging. Fluff quinoa with a fork, place it in a bowl, top with the carrots and their cooking oil, the feta and the walnuts. Season with salt and pepper and serve. Enjoy!
