Roasted sweet potatoes with walnuts, cinnamon and maple syrup



This simple dish is sure to please when you have a sweet craving yet still want to keep things healthy and nutritious! 


Ingredients (serves 4-5)
- 3 large sweet potatoes, washed, peeled and diced
- 1/2 cup walnuts
- 1-2 Tablespoons extra virgin olive oil
- about 1 Tablespoon cinnamon
- 3 Tablespoons maple syrup or honey

Place the diced sweet potatoes on a baking sheet lined with parchment paper, drizzle with the olive oil and roast at 400F for about 15 minutes or until fork-tender. Place the walnuts on a separate baking sheet and roast them alongside the sweet potatoes for about 3-4 minutes or until lightly toasted. Remove from the oven, allow them to cool slightly and chop the walnuts coarsely. Assemble the dish on individual plates starting with the sweet potatoes, adding the walnuts, some cinnamon and maple syrup. Enjoy!
