Ultimate vegan naan pizza
Because it's hard to choose which toppings to put on your pizza when you love them all, why not choose all! I used frozen spinach this time as this is what I had on hand but fresh spinach obviously works just as well! Just wash it well and chop it before you sauté it in a bit of olive oil.
Ingredients (makes 4 naan pizzas)
- 4 naan
- 1 recipe Ratatouille
- 1 red pepper, sliced
- 1 yellow or orange pepper, sliced
- 400g frozen spinach
- 2 garlic cloves, minced
- 2+2 Tablespoons extra virgin olive oil
- a handful Kalamata olives
In a nonstick pan, heat 2 Tablespoons extra virgin olive oil and sauté the peppers on medium heat for about 5 minutes or until lightly softened. Season with sea salt and pepper and reserve.
In a separate nonstick pan, heat remaining 2 Tablespoons extra virgin olive oil, add the spinach and sauté, stirring, for about 5-7 minutes or until warmed up, add the minced garlic, season with salt and pepper and cook for another 30 seconds - 1 minute, or until garlic is fragrant. Remove from heat and reserve.
Spread each naan with ratatouille, add a dollop of spinach here and there, a few peppers and olives. Cook naan pizza either in the oven (at 400F for about 10-15 minutes or until bread has slightly hardened and bottom is golden) or on the barbecue, on low heat, for about 10-15 minutes. Enjoy!
