Easy vegan vanilla muffins
These very quick and easy to make vanilla muffins are the best tasting muffins, vegan or not! You can leave them plain and add your favorite frosting for a delicious cupcake or you can add chocolate chips or frozen fruit to take them to the next level! I like the idea of making different kinds of muffins in the same batch, it's more fun and easier to please every family member at once!
Ingredients (makes 16 muffins)
Dry ingredients
- 2 cups (organic) flour
- 1 cup (organic) sugar
- 1 Tablespoon baking powder
- 1 teaspoon baking soda
- a pich of sea salt
Wet ingredients
- 1/4 cup extra light olive oil
- 1/4 cup applesauce
- 1 1/2 cup almond milk
- 1 teaspoon apple cider vinegar
- 1 teaspoon vanilla extract
Toppings (optional)
- vegan chocolate chips
- frozen (or fresh) blueberries, strawberries, cherries
- shredded coconut
Preheat the oven at 365F. Line the muffin tins with baking paper and reserve. Mix dry ingredients in a large bowl and wet ingredients in a medium bowl. Add wet ingredients to the dry ones and stir to combine. Distribute the batter between 16 muffin tins and add desired toppings (if using). Bake at 365F for 20 minutes or until a toothpick comes out clean. Allow muffins to cool completely if you want to use frosting.
