Pasta salad with peas, carrots and smoked tofu


A simple pasta salad that you can put together in 20 minutes!

Ingredients (serves 4-6)
- 1 package 500g pasta of your choice (fusilli, rotini, conchiglie etc.)
- 2 cups frozen green peas
- 2 carrots
- 300g smoked tofu, diced
- 1 garlic clove, mashed
- 1 Tablespoon oregano
- 3 Tablespoons balsamic vinegar
- 3 Tablespoons extra virgin olive oil
- sea salt and pepper, to taste

Boil the pasta 'al dente' according to the instructions on the packaging. Drain the pasta in a strainer and run under cold water to cool, allow to drain completely. Cover the peas with water, bring to a boil and simmer (uncovered) until tender (about 6 minutes). In a large bowl, combine the pasta with the drained peas and tofu. Using a vegetable peeler, cut long carrot strips over the salad bowl. Add the mashed garlic, oregano, salt, pepper, vinegar and olive oil. Toss gently to combine, taste and adjust seasonings. Enjoy!
