Greek style pasta salad


This is a simple pasta salad that makes use of the plenty of fresh vegetables now in season.


Ingredients (serves 6)
- 1 package short pasta of your choice
- 1 English cucumber, cut in half lengthwise then sliced
- 2 different color peppers, cut into bite size pieces
- 1 tomato, cut into bite size pieces
- 4 radishes, sliced
- 1 small red onion, minced
- 150 (vegan) feta, crumbled
- 1 Tablespoon dry mint
- a handful fresh mint leaves, chopped
- 3 Tablespoons red wine vinegar
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Boil the pasta 'al dente', drain and rinse with cold water, then allow to drain completely. In a large bowl, combine the pasta with the remaining ingredients, toss gently to combine, taste and adjust seasonings and serve immediately. Enjoy!
