Hearts of palm salad with lemon and garlic


This is a very simple yet flavorful way to enjoy hearts of palm. Use fresh herbs if available, if not - the dry version will work just as well! Serve it as a salad and don't forget to soak up those juices with a nice hearty bread!

Ingredients (serves 2)
- 1 can 400 ml hearts of palm, drained then sliced
- 1 garlic clove, mashed
- 1/2 lemon, juiced
- 3 Tablespoons extra virgin olive oil
- 1 teaspoon parsley
- 1 teaspoon mint
- Himalayan/sea salt and pepper, to taste

Combine the ingredients in a small bowl and toss gently. Allow to sit about 30 minutes (if possible!) and serve. Bon appétit!
