One-pan mushroom sauce

This is a very easy to make pasta sauce that requires very little preparation - just slice the vegetables and add them as you go to the cooking pan, toss them with the tomato sauce, olive oil and balsamic vinegar and pop it in the oven! Serve it over your favorite pasta and voilà - dinner is served!

Ingredients (serves 4-6)
- 400g mushrooms, sliced
- 1 onion, sliced
- 2 garlic cloves, minced
- 400ml thick tomato sauce (or canned diced tomatoes)
- 3 Tablespoons extra virgin olive oil
- 2 Tablespoons balsamic vinegar
- 1 Tablespoon oregano
- 1 Tablespoon basil
- Himalayan/sea salt and pepper, to taste

Combine the ingredients in an oven proof dish, toss to combine well and roast at 375F for about 30 minutes or until desired consistency, stirring a couple of times during cooking time. Serve it over your favorite pasta and enjoy!
