Lentil and pumpkin seeds pâté

This is a very tasty, nutritious and easy to make pâté that is ready in only 30 minutes. Spread it on your favorite bread, crackers or polenta.

- 1 cup lentils, picked and washed
- 1 bay leaf
- 1/2 cup pumpkin seeds
- 1 garlic clove, mashed
- 2 Tablespoons extra virgin olive oil
- 1 Tablespoon balsamic vinegar
- salt and pepper, to taste

Cover the lentils with plenty of water, add the bay leaf and boil until tender, discard bay leaf and drain. Place lentils, pumpkin seeds and garlic in blender and blitz until smooth. Add salt, pepper, balsamic and olive oil and pulse again, to combine. Adjust seasonings to your preference. Enjoy!
