Tofu and avocado dip with lemon and cilantro

Light, creamy and delicate, this nutritious dip will pair perfectly with your favorite tortilla chips.

- 500g organic silken tofu, drained
- 1 large ripe avocado
- 1 garlic clove, mashed
- 1 lemon, juiced
- a handful cilantro leaves, chopped
- salt and pepper, to taste

Place tofu, avocado, garlic, lemon juice, salt and pepper in a blender and blitz until smooth. Taste and adjust seasonings. Add in the cilantro and give it another whirl, to combine. Serve immediately and store any leftovers in the refrigerator.
