Quinoa salad with kale, cucumbers and toasted almonds

A delicious combination of powerfoods, this is a delicate and refreshing salad that can be served as a light meal or as part of a larger buffet.

Ingredients (serves 4-6)
- 1 cup quinoa, boiled according to the instructions on the packaging
- 1 small bunch kale, destemmed and chopped
- 1 English cucumber, diced
- a handful mint, chopped
- 1/2 cup almonds, toasted and roughly chopped
- 1 lemon, juiced
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Place the quinoa in a large bowl, fluff with a fork and allow to cool then add in the remaining ingredients and toss to combine. Adjust the seasonings to your preference and enjoy!
