Pasta salad with green peas and roasted mushrooms


This pasta salad can be served as a meal on its own or as part of a larger buffet.

Ingredients (serves 4)
- 500g pasta of your choice, boiled 'al dente' then rinsed with cold water and allowed to drain
- 300g mushrooms, quartered
- 200g frozen green peas, boiled and drained
- a handful Kalamata olives
- 1 garlic clove, mashed (optional)
- 2 Tablespoons oregano
- 3 Tablespoons balsamic vinegar
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Toss the quartered mushrooms with the olive oil and roast at 400F until tender. In a large bowl, combine the pasta with the peas, mushrooms and their cooking oil, olives, garlic (if using), oregano, balsamic, salt and pepper. Taste and adjust seasonings. Enjoy!
