Tofu scramble with peppers
This tofu scramble is a family favorite! If you haven't tried tofu scramble before you simply must, it is sooo good! It goes great with spiced up potatoes, toast, salsa and olives. I used different color peppers for this recipe but any kind will do.
Ingredients (serves 4)
- 500g organic extra firm tofu, rinsed
- 1 large onion, minced
- 3 garlic cloves, minced
- 1 red pepper, cut into bite size pieces
- 1 orange pepper, cut into bite size pieces
- 1 yellow pepper, cut into bite size pieces
- 3 Tablespoons extra virgin olive oil
Spice mix
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon granulated garlic
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne
- salt and pepper, to taste
Prepare the spice mix by combining the listed spices with a little bit of water, until you reach a runny consistency. Place the tofu between 2 paper towels and add a weight on top in order to press out extra water. Meanwhile, in a non stick pan, heat the olive oil and sauté the onions with the garlic until translucent. Add the peppers and cook for about 4 minutes or until softened. Crumble the tofu using your hands and add it to the pan (I like to tear pieces from the tofu block and mash them between my fingers to a consistency that is similar to scrambled eggs). Cook, stirring often and mashing any big pieces with a wooden spoon, for about 7 minutes or until tofu starts to brown. Add the spice mix to the pan, toss to coat evenly and continue cooking, stirring constantly for about 5 minutes longer, until some tofu pieces are lightly browned. Serve immediately. Enjoy!
