Rice salad with avocado, hearts of palm and cucumber


Light and refreshing, this salad is perfect for the warm weather we're dreaming of. 

Ingredients (serves 4-6)
- 1 cup long grain rice
- 2 avocados, sliced
- 1 can hearts of palm, sliced
- 1 English cucumber, cut in half lengthwise then sliced
- 3 green onions, sliced
- a handful coriander, chopped
- a pinch red pepper flakes, to garnish
- 1 lemon, juiced
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Cover the rice with plenty of water, bring to a boil, add salt, lower the heat and simmer for 15 minutes or until 'al dente'. Drain and rinse with cold water, then allow to drain completely. Place the rice in a large bowl, add the hearts of palm, cucumbers, green onions, coriander, lemon juice, olive oil, salt and pepper. Toss gently to combine. Taste and adjust seasonings. Garnish with the avocados and sprinkle with the red pepper flakes. Serve immediately and enjoy!
