Beet salad with peaches, quinoa and nuts

A delicious salad to be enjoyed on a warm summer day!

Ingredients (serves 4-6)
- 4 large beets (or 6 medium ones), peeled and cut into bite-size pieces
- 4 peaches, diced
- 1 cup quinoa, boiled according to the instructions on the packaging
- 1/4 cup walnuts, toasted and coarsely chopped
- 1/4 cup almonds, toasted and coarsely chopped
- 1 Tablespoon mint
- a handful fresh mint, chopped
- 1 lemon, juiced
- 3 Tablespoons extra virgin olive oil

In a large bowl, fluff the quinoa with a fork. Cover the beets with plenty of water and boil until tender, about 30 minutes. Drain and add to the quinoa, then allow salad to cool completely. Add the remaining ingredients, toss gently to combine, taste and adjust the seasonings to your preference and enjoy!
