Cabbage and pepper salad with savory and thyme

A very easy to make, flavorful and refreshing cabbage salad that accompanies so well summer's grilled dishes. To save time, shred the cabbage in a food processor.

Ingredients (serves 6)
- 1/2 medium size white cabbage, shredded
- 2 red peppers, diced
- 3 Tablespoons apple cider vinegar
- 1 Tablespoon maple syrup/agave/honey, or more, to taste
- 3 Tablespoons extra virgin olive oil
- 1 Tablespoon dry savory
- 5 thyme sprigs, (use the leaves only)
- 1 Tablespoon red pepper flakes (optional)
- salt and pepper, to taste

Combine all the ingredients into a bowl, taste and adjust seasonings. Allow to sit in the refrigerator for about an hour before serving, for the flavors to blend. Enjoy!
