Garlic and parsley sautéed mushrooms



A very simple and delicious side dish that is ready in 15 minutes. The key is in the seasonings: don't be shy with the pepper, garlic and parsley as they make all the difference! Serve it with your favorite bread, over polenta or pasta, or as an accompaniment to grilled dishes. 

Ingredients (serves 4 as a side dish)
- 300 g mushrooms, sliced
- 2-3 garlic cloves, minced
- a handful fresh parsley, chopped
- 3 Tablespoons extra virgin olive oil
- 2-3 Tablespoons freshly squeezed lemon juice
- sea salt and pepper, to taste

Heat the olive oil, add the mushrooms, give them a good grind of salt and pepper, raise the heat to medium and cook, stirring often, until tender. Lower the heat, add the garlic and parsley and cook for about 30 seconds, or until garlic is fragrant. Remove from heat and add a little bit of the lemon juice. Taste and adjust seasonings to your preference and serve immediately. Enjoy!
