Easy vegan sugar cookies/Biscuits à sucre végétaliens


  These sugar cookies are really easy to make, especially if you have a stand mixer which you can use throughout the entire process, easy-peasy! If not, use a hand mixer for creaming the sugar and the margarine and for adding the coconut milk and vanilla. Then, gradually add in the flour and the baking soda, half a cup at a time. If the mixer becomes tired, use your hands to knead in the remaing flour. You can leave the cookies plain, or you can get creative with all sorts of icings or simply dust them with a little bit of ground almonds or icing sugar. I like to cut the cookies with a round shape, spread the bottom of a cookie with a little bit of jam (or choconutella), add another cookie on top and dust them with finely ground almonds (or icing sugar).

Ingredients (yields 3 baking sheets)
- 1 cup (organic) sugar
- 1 cup (organic) vegan non hydrogenated margarine, at room temperature
- 1/4 cup coconut milk (use the thick part from a coconut milk can)
- 1 Tablespoon vanilla/almond extract/ orange blossom water
- 3 cups (organic) flour
- 1 1/2 teaspoons baking soda

To decorate (optional, use one or combine multiple choices)
- icing sugar, to dust the cookies using a fine sieve
- icing sugar + water, to make a glaze
- finely ground almonds, to dust the cookies using a fine sieve
- a few tablespoons of your favorite jam or (vegan) choconutella 

  Preheat the oven at 350 F (180 C) and prepare 3 baking sheets by lining them with parchment paper. 
  Place the sugar and the margarine in the mixing bowl and cream well until sugar is dissolved and composition is homogenous. Slowly add in the coconut milk and vanilla (or almond extract/ orange blossom water) and mix until well blended, then gradually add in the flour and baking soda. Continue mixing until the dough comes off the sides of the bowl. Roll out the dough to about 1 cm (1/4'') thin, on a lightly floured surface, and cut into the desired shapes. Gently lift the cookies (a thin spatula or knife might help) and place them on the baking sheet. Bake at 350 F for about 10 minutes, depending on the oven. Remove from the oven and allow to cool completely. The cookies will harden as they cool. 
  If you bake them a bit longer, until the bottom starts to brown, the cookies will be perfect for dunking in your coffee.
  If you like the cookies softer, do not over bake them and, once cooled, place them in a covered container. 
  You could also prepare a quick icing by mixing a few tablespoons of icing sugar with just enough water to create a gel-like consistency (use a whisk to prevent any lumps).

Biscuits au sucre végétaliens

  Ces biscuits au sucre sont très facile à préparer, surtout si vous avez un batteur sur socle que vous pourriez utiliser pour toutes les étapes de la préparation. Si vous n'avez pas accès à un batteur sur socle, vous pouvez utiliser un batteur à main pour crémer la margarine avec le sucre et pour incorporer le lait de noix de coco et l'extrait de vanille. Ensuite, ajoutez la farine et le bicarbonate de soude, une demi tasse à la fois. Si le batteur devient fatigué, continuez d'incorporer le restant de la farine en utilisant vos mains. Vous pouvez laisser les biscuits simples, ou vous pouvez les décorer à votre goût en utilisant toutes sortes de glaçages ou bien tout simplement les saupoudrer de sucre à glaçage ou de la farine d'amande. J'aime bien couper les biscuits en utilisant un emporte pièce rond et, quand les biscuits ont refroidi, tartiner un côté soit avec de la confiture ou avec choconutella (vous pouvez retrouver la recette ici). Ensuite je place un autre biscuit par dessus et je les fais saupoudrer avec de la farine d'amande (ou du sucre à glaçage).

Ingrédients
- 1 tasse sucre (biologique)
- 1 tasse margarine végétalienne non-hydrogénée (biologique)
- 1/4 tasse lait de noix de coco en conserve (utilisez la partie la plus grasse)
- 1 cuillère extrait de vanille/extrait d'amande/ eau de fleurs d'oranger 
- 3 tasses de farine (biologique)
- 1 1/2 cuillère de bicarbonate de soude

Pour décorer les biscuits (optionnel, utilisez un choix ou bien combinez plusieurs)
- sucre à glaçage (à saupoudrer en utilisant un tamis fin)
- sucre à glaçage + eau, pour créer un glaçage
- farine d'amande (amandes finement broyées) à saupoudrer en utilisant un tamis fin
- quelques cuillères de votre confiture préférée ou choconutella (vous trouverez la recette ici)

  Placez la grille au centre du four et préchauffez le four à 180 °C (350 °F). Tapissez trois plaques à biscuits de papier parchemin.
  Mettez le sucre et la margarine dans le bol du mélangeur et crémer au batteur jusqu'à ce que la composition soit homogène et le sucre bien dissout. Ajoutez lentement le lait de noix de coco et la vanille jusqu'à ce que bien incorporées. Ajoutez la farine et le bicarbonate de soude, une demi tasse à la fois. Continuez de mélanger jusqu'à ce que la pâte ne colle plus sur les côtés du bol. Saupoudrez une surface avec un peu de farine et roulez la pâte jusqu'à une épaisseur de 1cm (1/4''). Coupez la pâte avec des emporte pièces et placez les biscuits sur les plaques. Faites cuire au four pendant approximativement 10 minutes (dépendamment du four et de la grandeur des biscuits). Laissez les biscuits refroidir complètement avant de décorer. Les biscuits vont durcir en refroidissant. 
  Si vous faites cuire les biscuits jusqu'à ce que la base soit légèrement  brunie, les biscuits seront parfaits pour tremper dans votre café ou chocolat chaud!
  Si vous préférez les biscuits plus moelleux, ne les faites pas cuire trop, ils vont durcir en refroidissant. Une fois refroidis, mettez-les dans un contenant hermétique. 
  Vous pouvez aussi préparer un glaçage simple en mélangeant quelques cuillères de sucre à glaçage avec un peu d'eau jusqu'à obtenir une consistance gélatineuse. Utilisez un fouet pour un résultat homogène.
