Green peas and rice balls



These vibrant veggie balls make a wonderful addition to a festive meal. 

Ingredients (yields approx. 1 baking sheet)
- 5 cups frozen green peas, boiled and drained
- 2 cups rice, boiled and drained
- 1/2 cup panko breadcrumbs
- 2 Tablespoons fresh dill, chopped
- 1 Tablespoon garlic powder
- sea salt and pepper, to taste

Working in batches, pulse the peas and rice in a food processor until puréed, then transfer to a large bowl. Add remaining ingredients and mix well to combine. Taste and adjust the seasonings. Using an ice cream scoop (or your hands), shape the veggie balls and place them on a parchment lined baking sheet. Bake at 375 F for about 25 minutes or until a crust forms on the outside. Enjoy!
