Vegan French toast


Vegan French toast! Because things that taste good can actually be good for you too! Use a good quality, nutritious bread (I like organic sprouted grains bread) to prepare this breakfast favorite.

Ingredients (yields about 10 -12 slices)
- sliced bread
- 4 Tablespoons ground flax seeds
- 1 1/2 cups almond milk
- 1 teaspoon vanilla/almond extract
- 1 teaspoon cinnamon
- 1 Tablespoon coconut oil (or other oil), for frying

Toppings (use all or any combination)
- fruit
- crushed walnuts
- cinnamon
- maple syrup/honey
- hemp seeds
- chia seeds

  In a medium size bowl, large enough to contain a complete slice of toast, add the flax seeds and slowly whisk in the almond milk. Add the vanilla extract and the cinnamon and allow to sit for about 10 minutes, until the composition has slightly thickened. Use this time to prepare the fruit and desired toppings.
  Heat the oil in a non stick pan. Using a fork, dip one slice of toast at a time in the batter, flipping it so that it gets evenly coated on both sides. Do not keep the toast long in the batter, a quick dip, just enough for the bread to catch the batter is enough. Place the toast in the heated pan and do not move it around until it forms a crust on the bottom (it will take about 4 minutes, you will see the edges turning golden brown), then flip it using a spatula and continue cooking for another 3-4 minutes or until golden and crusty. 
  Top the french toast using your favorite fruit, crushed walnuts, hemp and chia seeds, cinnamon and a good drizzle of maple syrup. Enjoy!
