Freekeh and lentil salad

 If you haven't yet tried freekeh, I certainly recommend that you do! Besides being packed with nutrients (look it up!), the flavor and texture are amazing! 

Ingredients (serves 4 as a meal)
- 1 cup freekeh
- 1/2 cup green lentils, picked and washed
- 1 small red onion, julienned
- 2 tomatoes, roughly chopped
- 1/4 cup pepitas
- 2 garlic cloves, mashed
- 1 bay leaf
- a handful fresh parsley, chopped
- a handful fresh mint, chopped/ 1 Tablespoon dry mint
- 1 lemon, pith removed then diced + 1/2 lemon, juiced
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Boil freekeh according to instructions on the packaging, let cool, then place in a bowl and fluff with a fork. Place lentils in a pot, cover with about 2 inches of water, add the bay leaf and boil for about 15 minutes, or until lentils are cooked. Drain and add to the freekeh, together with the onion, tomatos, pepitas, garlic, parsley, mint and chopped lemon. Season with the salt, pepper, lemon juice and extra virgin oil. Taste and adjust seasonings according to your preference. Enjoy!
