White bean salad

 I have three words for you: simple, delicious, nutritious! It doesn't get any better than that - to me, at least. Whip it up in minutes (if using canned beans) and serve it with pita bread and olives and you will have the perfect lunch or have it as a side dish.

Ingredients (serves 4 as a side dish)
- 1,5 cup white beans, boiled (or 1 can) and drained
- 1 large tomato, diced
- 1 small red onion, diced
- 1 garlic clove, mashed
- 1 lemon, juiced
- 3 Tablespoons extra virgin olive oil
- a handful fresh parsley, chopped
- 1 teaspoon sumac (optional)
- 1 teaspoon Arabic pepper (optional)
- salt and pepper, to taste

Combine all ingredients using a lot of love and enjoy!
