Peach salad with honey-mint dressing


Delicate, light and refreshing, this salad uses the most amazing August peaches, bursting with flavor and sweetness. Serve it as an entrée or to complete a meal.

Ingredients (serves 1)
- a handful mixed greens (such as arugula, baby spinach, baby romaine)
- 1 peach, sliced
- 1/4 red onion, thinly sliced
- 5 almonds, lightly toasted
- salt and pepper

Honey-mint dressing 
- 1 Tablespoon honey/maple syrup
- 3 Tablespoons balsamic vinegar
- 3 Tablespoons extra virgin olive oil
- 1 teaspoon dry mint
- a pinch cayenne

To assemble the salad, arrange the greens on a platter, add the peach and onion slices, the almonds, salt, pepper and drizzle with the dressing. Enjoy!
