Quinoa and chickpea salad

I like quick and easy recipes, perhaps because I looove to eat and don't want to test my patience while preparing my food. That said, here's something you can throw together in 20 minutes or less - even I can wait that long!

 Ingredients (serves 6)
- 1 cup quinoa, boiled according to instructions on the packaging then allowed to cool
- 1 cup chickpeas, boiled (or 1 can) and drained
- 1 large tomato or 2 smaller ones, sliced or diced
- 1 garden cucumber, sliced or diced
- 1 small red onion, julienned
- 1 garlic clove, mashed
- 1 lemon, juiced
- a handful fresh parsley, chopped
- 1 teaspoon sumac (optional)
- salt and pepper, to taste
- 3 Tablespoon extra virgin olive oil

Combine all ingredients and savor!
