Creamy garlic soup


This creamy, flavorful soup is quick and easy to make, perfect for a busy weeknight. Serve it with bread or croutons and you have comfort food at its best! 


Ingredients (serves 6)
- 1 head of garlic, peeled and minced
- 3 carrots, sliced
- 3 potatoes, diced
- 5-6 cups vegetable broth or water
- 2 Tablespoons extra virgin olive oil
- a few parsley sprigs, chopped
- salt and pepper, to taste

Heat the olive oil and sauté the garlic for 30 seconds or until fragrant, do not let it brown. Add the vegetable broth (or water), carrots, potatoes and parsley, season with salt and pepper and allow to simmer, covered, for 15 minutes or until veggies are tender. Remove from heat and, using an immersion blender (or any other blender available), puré the soup to a creamy consistency. Taste and adjust seasonings.
