Sautéed baby carrots


This is a simple yet flavorful side dish that you can put together in minutes. The carrots are blanched first thus reducing the cooking time, then sautéed in the garlic flavored olive oil. 

Ingredients (serves 2)
- 2 cups baby carrots
- 2 garlic cloves, peeled and smashed with the flat of the knife
- 1 Tablespoon parsley
- 2 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Bring a medium size pot of salted water to a rolling boil, add the carrots and cook for 5 minutes or until fork tender. Drain carrots and reserve. Heat the olive oil in a skillet, add the smashed garlic and cook for 30 seconds - 1 minute (until fragrant), then add the carrots and parsley and toss for a couple of minutes, until heated through. Season with salt and pepper and serve immediately. Enjoy!
