Oven-crisped potatoes


We love potatoes in our home! We make them often, in different ways, and they're always received with a lot of appreciation! This is a very simple side dish that goes well with practically everything. It is also great for entertaining as you can boil the potatoes ahead of time and pop them in the oven just before your guests arrive.

Ingredients (serves 6)
- 6 medium potatoes, peeled and cut into bite size pieces
- 2-3 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Bring a large pot of salted water to a rolling boil, add the potatoes using a slotted spoon and cook for 5 minutes, or until fork tender. Do not overcook as they will fall apart. Drain the potatoes completely, then place them in an oven proof dish and toss them with the olive oil, salt and pepper. Roast at 400 F for 15 minutes or until slightly browned. Enjoy!
