'Feel better' carrot soup with garlic, ginger and turmeric


This is the kind of soup I like to make when one of us is feeling under the weather - it's light and filled with healing ingredients such as garlic, onion, ginger, turmeric and cayenne. I like to add a lot of water to it and have second (and third) servings throughout the day. If garlic is not your thing, simply sauté all eight cloves together with the onions.

Ingredients (serves 4-6)
- 1 onion, minced
- 8 garlic cloves, minced (divided)
- 6 large carrots, sliced
- 1 piece 3 cm fresh ginger, finely chopped
- a handful fresh parsley, chopped
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne 
- 3 Tablespoons olive oil
- salt and pepper, to taste

Heat the olive oil and sauté the onions with half of the garlic (if you're not as crazy about garlic as I am, use all the garlic at this point) until translucent. Add the ginger, spices and carrots and cook, stirring for a minute then add enough water to completely cover the vegetables. Simmer, covered, until carrots are tender (about 20 minutes), turn off the heat, add the remaining garlic and the parsley. Adjust seasonings to your taste and serve with garlic croutons. Enjoy!
