Mediterranean freekeh salad




This is a quick and easy to make salad, packed with nourishing ingredients and light, mediterranean flavors. Hearty enough to be a meal on its own, it is perfect for the lunch bag!

Ingredients (serves 6)
- 1 cup freekeh, boiled according to instructions on the packaging
- 1 cup boiled chickpeas, drained
- 1 English cucumber, diced
- 2 cups cherry tomatoes or 1 large tomato, diced
- 3 scallions, sliced
- 10 kalamata olives
- a handful fresh parsley, chopped
- 2 teaspoons mint
- 1 lemon, juiced
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Place the freekeh into the serving bowl, fluff with fork and allow to cool. Add the remaining ingredients, toss gently to combine, adjust seasonings to your preference and serve. Enjoy!
