Quinoa tabbouleh



Here is one of my favorite salad recipes, perfect for starting the new year on a light note!

Ingredients (serves 6)
- 1/2 cup quinoa, boiled according to instructions on packaging
- 2 tomatoes, diced
- 1 small red onion, minced and rubbed with 1 teaspoon Aleppo pepper
- 1 large bunch flat leaf parsley, finely chopped
- a handful fresh mint, finely chopped
- 1 teaspoon sumac
- 1 lemon, juiced
- 3 Tablespoons extra virgin olive oil
- sea salt, to taste

Garnish with
- 1/2 English cucumber, diced

Place the boiled quinoa into the serving bowl, fluff with fork and allow to cool. Add the rest of the ingredients and toss gently to combine. Adjust seasonings to your preference and garnish with the diced cucumber. Enjoy!
