Red lentil and roasted red pepper pâté


This is a delicious, easy to make pâté that works great as an appetizer. I used roasted red peppers from the jar (I always keep one on hand) but feel free to roast some fresh peppers or, to simplify the recipy even more, just add them to the cooked onions and sauté them until tender, the result would still be very tasty!

Ingredients
- 1 cup red lentils, washed
- 2 cups water
- 2 roasted red peppers, diced ( I used from jar)
- 1 onion, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne
- 2 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Place the lentils with the water in a saucepan, season with salt and pepper and boil until  perfectly tender and not much water is left (the lentils will fall apart and that is the consistency we want for the pâté), reserve. Heat the olive oil and sauté the onions until translucent, add the roasted red pepper and the spices and cook for one minute then add the lentils and, keep cooking until all liquid has evaporated. Place the composition into the blender and blitz until smooth. Taste and adjust seasonings. Serve with your favorite bread and a green salad (goes fantastically well with Kale Tabbouleh but then again, what doesn't ?!) and enjoy!
