Blueberry muffins
These blueberry muffins are not particularly sweet, they are perfect for breakfast, but if you'd like them sweeter, you could sprinkle them with organic powdered sugar.
Ingredients (makes 12 muffins)
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- a pinch of sea salt
- 1 teaspoon cinnamon
- 3/4 cup packed brown sugar
- 3/4 cup coconut milk
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 cup (or more) frozen blueberries
Prepare muffin tins by lining them with baking paper or spraying them with cooking oil. In a large bowl, combine flour, baking soda, baking powder, salt and cinnamon. Separately, mix the brown sugar with the coconut milk, coconut oil and vanilla extract. Add the wet ingredients to the dry ones, fold in the blueberries then pour mixture into the muffin tins. Bake at 400 F for 15-20 minutes, or until toothpick inserted in the centre comes out clean. Enjoy!
Briose vegane cu afine
Aceste briose nu sunt foarte dulci, sunt foarte potrivite la micul dejun. Daca doriti, le puteti pudra cu zahar praf biologic.
Ingrediente (12 briose):
- 1 1/2 cani de faina
- 1 lingurita bicarbonat de sodiu
- 1 lingurita praf de copt
- 1 lingurita scortisoara
- un varf de cutit de sare de mare
- 3/4 cana zahar brun
- 3/4 cana lapte de cocos
- 1/4 cana ulei de cocos, topit
- 1 lingurita esenta de vanilie
- 1 cana(sau mai mult) afine congelate
