Linguine with mushrooms and red bell pepper
Pasta is great comfort food especially when it's ready under 25 minutes, perfect at the end of a busy day. Just toss some veggies with good quality olive oil, flavor them with garlic and, there you go, dinner is ready!
Ingredients (serves 2)
- linguine
- 300 g mushrooms, sliced
- 1 red bell pepper, cut into bite-size strips
- 4 garlic cloves, smashed and minced
- 3 Tablespoons extra virgin olive oil
- salt and pepper
- nutritional yeast
Boil the linguine al dente, according to instructions on the packaging. Meanwhile, in a nonstick skillet, heat the evoo, add the peppers and cook for about 4 minutes, until they start to turn orange. Add mushroom slices and sauté until veggies are softened, about 6 minutes longer. Add salt, pepper and garlic and, stirring constantly, cook for another minute. Add the drained linguine and toss with the veggies. Arrange on a plate and sprinkle with nutritional yeast. Enjoy!
