Quinoa salad with cucumbers and toasted walnuts
This quinoa salad is definitely one that I will be making a lot of this summer, it's very refreshing due to the lemon,mint and cucumber and those toasted walnut bits are a nice surprise in each bite.
Ingredients (serves 4-6)
- 1 cup quinoa
- 1 English cucumber/ 3 garden cucumbers, diced
- 1/2 cup - 3/4 cup walnuts
- 1 lemon
- a few mint sprigs, finely chopped
- 3 Tablespoons extra virgin olive oil
- salt and pepper
Boil quinoa according to instructions on the packaging, place it in a bowl and let cool. Meanwhile toast the walnuts, either in the oven or in a pan, let cool and chop into little bites. Peel the lemon, remove the pith, then cut lemon into very small bits. When quinoa has reached room temperature, add diced cucumbers, chopped walnuts, lemon bits, mint, salt, pepper and olive oil. Stir to combine, taste and adjust seasonings. Enjoy!
