Roasted red pepper and lime hummus
Here is a variation of an all-time favorite, hummus! Adding roasted red peppers brings extra flavor and smoothness while replacing the lemon with lime gives it a little unexpected twist. Keep cans of chickpeas in your pantry and you can make hummus in minutes, great for entertaining and for the lunch box!
Ingredients
- 1 can 500 ml chickpeas, rinsed and drained
- 3 small roasted red peppers
- 2 garlic cloves
- 2 teaspoons tahini
- 1/4 cup water, or more, as needed
- 1 Tablespoon extra virgin olive oil
- 1 lime, juiced
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika, plus extra, to garnish
- sea salt
Place all ingredients in a blender/food processor and blend until you reach a smooth consistency. Taste and adjust seasonings to your preference. Place in a serving dish, sprinkle with paprika and a drizzle of extra virgin olive oil. Serve with your favorite bread, veggies or crackers. Enjoy!
