Dark chocolate muffins
These dark chocolate muffins are simply delightful - moist, light, not too sweet, easy to make and ready fast! Leave them as is or add some toppings, use your imagination - possibilities are endless!
Ingredients (makes 12 muffins)
Dry ingredients:
- 1 1/2 cups flour
- 1/2 cup dutch dark cocoa
- 1 teaspoon baking soda
- 1 teaspoon sea salt
Wet ingredients:
- 1 banana
- 1 cup brown sugar
- 1 cup coffee
- 1/4 cup coconut oil, melted
- 1 teaspoon lemon juice
- 2 teaspoons vanilla extract
Toppings (optional):
- walnut - brown sugar crumble: add a few walnut pieces per muffin and sprinkle with brown sugar
- semi-sweet chocolate chips
- peanut butter: 1 teaspoon per muffin, add it in the middle of the muffin and gently swirl
Line muffin tins with baking paper or spray them with cooking oil. In a large bowl, combine flour, cocoa, baking soda and sea salt. In a medium bowl, mash banana with a fork, add brown sugar and coffee and stir to combine. Add melted coconut oil, lemon juice and vanilla extract. Add wet ingredients to dry ingredients, stir to combine. Pour composition into muffin tins and add toppings (if using). Bake at 350 F for 15-20 minutes, or until a toothpick inserted in the middle comes out clean. Enjoy!
Excelenta reteta!:) Eu ma gandesc sa inlocuiesc cafeaua cu cacao. (sunt mai mult ptr copii briosele decat ptr adulti) desi sigur am sa mananc si eu ...macar 1:))))
ReplyDeleteMultumesc mult! Si eu doar una am apucat sa mananc hahaha! Legat de inlocuit, eventual adauga o lingura de cacao in plus la ingredientele uscate si foloseste doar apa in loc de cafea ( nu sunt sigura s-ar omogeniza compozitia cu cacao) sau foloseste lapte (de cocos, migdale etc). Sper sa va placa!
