Potato salad with sautéed mushrooms and tofu mayonnaise


Here's a creamy but light potato salad topped with sautéed mushrooms. I had some tofu mayonnaise left in the fridge and I decided to put it to good use!

Ingredients (serves 4 as a side dish)
- 4 large potatoes, boiled skin on 
- 1 small onion, julienned
- 2 roasted red bell peppers, diced
- 200 g mushrooms, sliced
- a handful parsley, chopped
- 1 Tablespoon apple cider vinegar
- 1-2 Tablespoons good quality vegetable oil, to sauté the mushrooms
- a few tablespoons tofu mayonnaise
- sea salt and pepper, to taste

In a non stick pan, heat the oil and sauté the mushrooms until they soften, season with salt and pepper, reserve. If you used red potatoes or new potatoes, keep the skin on, if not - peel them, then cut them into bite-size cubes. Add potatoes to a large bowl and sprinkle them with the apple cider vinegar. Add rest of the ingredients and toss gently. Top the salad with the sautéed mushrooms. Enjoy!

Salata de cartofi cu ciuperci calite si maioneza de tofu

Pentru ca mai aveam un bol de maioneza de tofu in frigider, m-am gandit sa fac o salata de cartofi cremoasa dar in acelasi timp lejera. Sper sa va placa si voua!

Ingrediente ( 4 portii ca garnitura)
- 4 cartofi mari, fierti in coaja in apa cu sare
- 1 ceapa mica, taiata felii
- 2 ardei rosii copti, taiati cubulete
- 200 g ciuperci, taiate felii
- o mana patrunjel verde, tocat
- 1 lingura otet de mere
- 1-2 linguri ulei vegetal de buna calitate, pentru a cali ciupercile
- cateva linguri de maioneza de tofu (cititi reteta aici)
- sare de mare si piper, dupa gust

Incingeti uleiul si caliti ciupercile, adaugati sare si piper. Daca ati folosit cartofi rosii sau cartofi noi, nu ii decojiti, daca in schimb coaja e mai groasa - indepartati-o si apoi taiati cartofii cubulete si stropiti-i cu otetul de mere. Intr-un bol mare, amestecati cartofii cu restul ingredientelor si decorati-i cu ciupercile calite. Pofta buna!
